⅔ cup whole wheat flour

⅔ cup unbleached all-purpose flour

⅓ cup cornmeal1 tablespoon baking powder

1 teaspoon ground ginger

½ teaspoon baking soda

2 cups nonfat plain yogurt

¾ cup fat-free egg substitute

2 tablespoons canola oil

1 apple, peeled, cored, and coarsely grated

MUFA: 1½ cups pecans, chopped

1. In a large bowl, combine the flours, cornmeal, baking powder, ginger, baking soda, yogurt, egg substitute, and oil until combined.

2. Fold the grated apples into the batter.

3. Coat a large nonstick skillet with nonstick cooking spray and heat over medium heat.

4. For each pancake, spoon 2 to 3 tablespoons of the batter into the skillet. Cook for 2 minutes or until bubbles appear on the surface and edges set. Flip to the other side.

5. Cook until lightly browned, about 2 minutes. Repeat with the remaining batter.

6. Top each serving with 2 tablespoons of the chopped pecans.
