Here’s a breakdown of the most common mustard types you’ll see at the grocery store, and how they all differ.

Yellow Mustard

Yellow mustard—the kind you put on your ballpark hot dogs—is made with (you guessed it!) yellow seeds, finely ground and mixed with vinegar and water. Turmeric is often added too, which helps give the mustard its trademark hue. Yellow mustard is on the mild side of the spectrum, though it should still have a distinct pungency.

Spicy Brown Mustard

Spicy brown mustard is made with brown seeds and less vinegar than yellow mustard. The hotter seeds and lower acidity lend it a sharper kick than yellow mustard, helping it cut through the fatty, flavorful deli meats it often accompanies. The bran is also left on the seeds, which don’t get fully broken down and give the final product a coarser texture.
