Chinese Black Vinegar
Made from glutenous rice, wheat, sorghum, millet, or a combination of any of these, Chinese rice vinegar has a rich, complex flavor to go with its dark color. I discovered black vinegar while serving as executive chef at a tea house specializing in rustic Chinese fare. Whenever I found myself stumped as to how to bring one of my dishes from good to special, a few dashes of black vinegar did the trick more than a few times. On its own or mixed with soy sauce or tamari it makes a great dipping sauce for Asian dumplings or any fried foods. Its works great as a replacement for malt vinegar for fish and chips. Although it lacks the sweet notes of balsamic vinegar, it’s a workable substitute (and a fraction of the price).
