CAJUN BABY BACK RIBS

Ingredients

1 rack of baby back ribs

Waterboy Rib Rub

1 tsp. red pepper flakes

1 tsp. dried thyme leaves

1 tsp. dried oregano leaves

½ tsp. dried rosemary

2 tbsp. paprika

1 tsp. garlic salt

1 tsp. Lawry’s seasoned salt

½ tbsp. ground cumin

1 tsp. cayenne pepper

½ tsp. ground black pepper

Instructions

1. Set up the grill (or smoker) for indirect heat at 225°F. Use hickory, pecan, or any fruitwood for smoking.

2. To make the Waterboy Rib Rub, use a coffee grinder to coarsely grind red pepper flakes, thyme, oregano, and rosemary. Do not grind too finely.

3. In a bowl, combine all the Waterboy Rib Rub ingredients and mix well. Store in an airtight container or a storage bag until ready to use.

4. Apply the Waterboy Rib Rub evenly over the baby back ribs and place them on the grill.

5. Smoke for 2 hours.

6. Wrap the ribs tightly in heavy-duty aluminum foil and place back on the cooker.

7. Cook for 1½ hours.

8. Unwrap the ribs and cook for 30 minutes.

9. Rest the rack of ribs until they are cool enough to handle, about 10 minutes.

10. Slice the ribs into individual bones and serve immediately. Apply extra Waterboy Rib Rub while serving.
