Sriracha-Lime Hot Sauce

Yield: Makes about 1 cup; you’ll have leftovers, which you’ll definitely appreciate later.

Think of this sauce as ketchup for pyromaniacs—and don’t think of serving barbecued lamb belly without it.


¾ cup sriracha

1 teaspoon freshly grated lime zest

2 tablespoons fresh lime juice

2 tablespoons soy sauce

2 tablespoons honey

3 tablespoons minced fresh cilantro

Place the sriracha, lime zest and juice, soy sauce, honey, and cilantro in a small bowl and whisk to mix. It will keep in the refrigerator for several weeks.
