Using a hand blender, puree the soup. Add the whipping cream to the pan. Stir until combined and cook for 2 minutes. Remove the soup from the heat and serve.
Creamy Bacon Mushroom Soup
Makes 2 quarts
Ingredients
10 bacon strips, diced
1 lb. sliced fresh mushrooms
1 cup chopped onion
3 garlic cloves, minced
1 quart heavy whipping cream
14 oz. can chicken broth
5 oz. shredded Swiss cheese
3 tbs. cornstarch
1/2 tsp. salt
1/2 tsp. black pepper
3 tbs. water
Directions
In a dutch oven over medium heat, add the bacon. Cook about 8 minutes or until the bacon is crisp. Remove the bacon from the pan using a slotted spoon and drain on paper towels.
