Put the wine and water together with the herbs in a pan and simmer for 5 minutes to infuse the liquid with the herbs.

Rest the pieces of turbot on top of the herbs, skin side up, then cover the pan and simmer for about 6 minutes, until the fish is cooked through.

Lift the fish onto a plate and keep warm. Add the butter to the pan and boil rapidly for 10 minutes to reduce the liquid and make a sauce.

To serve, peel the skin off the turbot and place the fish on a warmed plate. Stir the green sauce into the sauce to combine, and spoon over the fish.
