MAKES ABOUT 12 BLINTZES

For the Crêpes:

1 cup milk

4 eggs, lightly beaten

1 cup all-purpose flour

1 teaspoon salt

Melted butter, for frying

For the Cheese Filling:

¾ pound cottage cheese, drained

1 egg yolk

½ tablespoon melted butter

1½ teaspoons sugar

Pinch ground cinnamon

½ teaspoon salt

For the Potato Filling:

1¼ cup mashed potato

1 egg, lightly beaten

1 tablespoon melted butter

½ teaspoon salt

Pinch ground nutmeg

Ground black pepper
