Slow Cooker Jambalaya
Everyone will want some of this. Cook it at home without the seafood. Then reheat it. When the dish is hot, toss in the shrimp and cook for 15 minutes. This will keep the shrimp from overcooking. It’s a great idea to keep some hot sauce next to the slow cooker at the potluck.
Cooking Time: 6 hours and 20 minutes
Servings: 16
Ingredients: • 4 ¼ cups chicken broth
• 2 tsp. Cajun seasoning
• 1 diced green pepper
• 1 diced red pepper
• 2 diced onions
• 4 minced garlic cloves
• Salt and pepper to taste
• 15 oz. drained diced tomatoes
• 1 lb. sliced Andouille sausage
• 1 lb. diced chicken
• 2 cups long-grained rise
• 1 lb. peeled and deveined shrimp
Directions:
1. Add all ingredients except the rice and shrimp to the slow cooker and stir well.
2. Cook on low for 5 hours.
3. Check to make sure you have enough liquid and add the rice.
4. Cook for 1 more hour.
5. Reheat the jambalaya at the potluck. When it is heated, add the shrimp and cook for 20 more minutes.
