Strawberry charlotte with Monsieur Cuisine

500g of strawberries
26 cookies with a spoon
140g powdered sugar
1 tablespoon Strawberry Alcohol
6 sheets of gelatin
2 tablespoons of lemon juice
30cl semi-thick cream
100g of Greek yoghurt
1sachet of vanilla sugar
Preparation
Bring 15 cl of water and 80 g of sugar to the boil in the vat of your Mister Cuisine for 3 min / vit. 2 / 120°C. As soon as it boils, stop cooking. Let cool and add the strawberry alcohol. Reserve and replace the vat without rinsing. Soak the gelatine in water for 10 minutes.
Reserve 8 strawberries, then mix the others with lemon juice, yoghurt and remaining sugar for 30 sec / vit. 5 to 10 / 0 °C.
Heat for 5 min / vit. 2 / 90 °C then add the gelatine, stir and filter. Set aside. Wash and dry the vat. Place it, with its whisk and cream, in the freezer for 20 minutes.
Pour the cream into the tub and whip with the mixer for 1 min 30 / speed 3.5 / 0 °C. Add the vanilla sugar, reducing the speed.
Add the whipped cream to the syrup prepared step 1 in the bowl.
Dip each cookie in the alcohol, place them on the bottom and sides of the mold. Pour in the mousse, inserting the remaining strawberries. Add a layer of cookies, place in a cool place for 6 hours.
