ALTHOUGH WE’RE AT the market to buy vegetables, why not also have a look at the fish? As we walk around, a whole universe of fish in myriad shapes and colours opens before our eyes: giltheads that come only from the valleys of the lagoon, their shiny scales shining in the light; speckled turbot from the northern Adriatic; strange-looking John Dory from the Atlantic; soft red scorpion fish from the Mediterranean, with their swollen bellies. A huge one-eyed cuttlefish captivates us with its beautiful patterning, while the little grey shrimps, still alive and jumping, risk ending up squashed on the ground below by the passing crowds.

The show is always exciting, even if we’ve seen it hundreds of times before, and we never get tired of sampling a particular fish or shellfish, cooked just the way we like it.

Eventually we choose a counter to stop at. Amid the various demands for freshness and reassurances of quality, we catch the eye of the person next to us and enjoy a moment of tacit understanding, before sharing our impressions of today’s market, past experiences and precious advice on the best way to cook our chosen dish.
