Tilden was disappointed not to have any roast meat and presumed it not to be part of a Chinese meal, but had he been entertained by a Manchu, it would have been the main event. Southerners, wrote the Manchu-era gourmet Yuan Mei, weren’t that keen on cattle, sheep, and deer, whereas the Manchus ate little else.10

In an affirmation of their nomadic roots, but also a distinct echo of ancient ritual meals of the Bronze Age, the traditional Manchu blow-out was known as a Meat Gathering (shirou zhi hui) and would feature a garden tent and an open invitation to the whole neighbourhood. Each circle of up to ten guests, seated on mats, was provided with a hunk of boiled meat on a two-foot bronze plate, along with a bronze bowl of meat juices (plus ladle) and a communal wine bowl.
