Methods:

1. Prepare the paste. In a bowl, add in all of the ingredients for the paste. Stir well until smooth in consistency. Cover and set aside for later use.

2. Prepare the chicken curry. Preheat the oven to 400 degrees.

3. In a bowl, add in the chicken thighs. Pour the paste over the chicken and toss well to coat. Cover and set aside to marinate for 30 minutes.

4. Transfer the chicken into a roasting pan.

5. Top off with the sliced capsicum, juice from one of the limes, half of the lime leaves and the lemongrass stalks.

6. Place into the oven to bake for 10 minutes. Remove and flip the chicken.

7. In the roasting pan, add in the coconut milk and remaining lime leaves. Stir gently to mix. Place back into the oven to bake for 10 to 15 minutes.

8. Remove and serve with a topping of the sliced lime and coriander leaves.
