Ingredients:
2 medium chicken fillets, cut into strips
4 rashers of streaky bacon
2 ripe avocadoes
8 vine cherry tomatoes
½ cup of olive oil
2 tbsp honey
1 tbsp Dijon mustard
Method:
Heat a splash of oil over a medium flame. Add the strips of chicken breast and the bacon and cook for 7-9 minutes, until the chicken is cooked through and the bacon is crispy. Drain the liquids after cooking and allow cooling slightly for 5 mins.
Meanwhile, mix the oil with the honey and mustard and stir thoroughly until pourable. Scoop out the flesh of the avocado a slice.
Gently fold the avocado into the chicken and back mix and place on a plate. Drizzle over the honey and mustard dress and tuck into this fresh and fabulous lunchtime treat.
