Sweet potatoes quesadillas

I get tired to serve my children the same type of food every day, that’s fact. They do love cheese quesadillas. So one day, I thought I would trick them and add some sweet potatoes inside their quesadillas: they ended up loving it!

Servings: 2

Preparation time: 30 minutes

Ingredients:

• 2 medium tortillas (I choose whole wheat it’s healthier)

• 1 cup mashed sweet potatoes

• ½ cup red kidney beans

• ¼ shredded pepper jack cheese

• Pinch nutmeg

• Sour cream on the side if you wish

• Butter for cooking

Method:

Make sure you prepare a full cup of sweet potato puree by microwaving your potatoes or buy them from the can.

Season with nutmeg. Set aside.

Place the tortillas on a flat surface and do spread the sweet potato puree on one side of the bread.

Add some kidney beans and cheese and fold the tortilla close.

Heat some butter in a skillet, do roast on each side the tortillas, until you notice the cheese is completely melted.

Serve with sour cream.
