8. Anglo-Indian Mutton and Potato Curry

Recipe detail: Mutton cooked with tomatoes and spices

Theme: Pressure baking mutton

Building blocks

Base: mutton, tomato, potato

Flavouring: chilli powder, turmeric powder, coriander powder, OPOS ginger garlic paste, cumin powder

Additives: coconut milk, coriander leaves, caramelised onions

Prep: Mix together 250g tender mutton medium-cut, 1/2tsp each (chilli powder, cumin powder, coriander powder),1/4tsp each (turmeric powder, salt), 3/4tsp OPOS ginger garlic paste.

Recipe

In a 2L PressureBaker layer as below:

Layer 1: 2Tbsp oil, 1Tbsp water

Layer 2: 1/2C chopped tomatoes

Layer 3: Marinated mutton

Layer 4: 1 potato cut into half

Layer 5: 2Tbsp caramelised onions

Cook on high standardised heat for 12 whistles / 8minutes. Let the pressure settle.

Mix in 2Tbsp coconut milk and 1Tbsp chopped coriander leaves. Serve.

Replace / Supplement

1. Mutton with any other meat, chicken etc

2. Your favourite spice mix or curry powder

3. Oil with butter or ghee

4. Chopped tomatoes with caramelised tomatoes in Layer 5

Tips

1. Marinate the mutton longer for quicker cooking and more absorption of flavours

2. Increase or decrease the spice level as per preference

3. Can add a little warm water to make thinner gravy
