Pumpkin Curry Soup

Ingredients

two tsps coconut oil — either extra-virgin olive oil

one half cups sliced sweet yellow onion — approximately one average

3 cloves garlic — minced (approximately one tbsp)

one tbsp minced fresh ginger

3 tbsp Thai red curry paste

2-3 cups low-sodium vegetable bouillon — either low-sodium chicken bouillon supposing the soup being vegetarian is not a concern, divided

two tbsp almond butter — either peanut butter, I used natural drippy peanut butter

two cans pure pumpkin puree — (15 ounce cans) not pumpkin pie filling

half tbsp coconut sugar — either light brown sugar. Dont omit, as this balances the flavor of the soup

one tsp ground cumin

half tsp kosher salt

One-quarter tsp ground black pepper

1/8 to One-quarter tsp cayenne pepper — plus additional to taste

one can light coconut milk — (14 ounces)

For topping: sliced roasted peanuts either pepitas — sliced fresh cilantro, coconut cream either plain nonfat Greek yogurt
