TUNA CONFIT

Preheat the oven to 250°F. Cut a 2-pound tuna fillet into 2-inch-thick pieces. Season the pieces with salt and pepper, and place in a single layer in a baking dish. Add 8 black peppercorns, bruised; 2 cloves garlic, crushed; 3 bay leaves; 1 teaspoon fennel seeds; and 1 lemon, thinly sliced. Pour in extra virgin olive oil to cover the tuna. Cover the dish with aluminum foil and bake until tender, 45 to 50 minutes. Remove from the oven and let cool completely. Pick through and discard the bay leaves, lemon slices, and garlic cloves, and then pack the tuna into a glass jar or plastic container. Strain the juices from the baking dish and pour over the tuna. Add extra virgin olive oil to cover. Cover tightly and refrigerate for up to 1 week. Bring to room temperature before serving.
