Grilled Chicken Chipotle Tacos

Chipotle peppers are smoked jalapeño peppers in adobo sauce. The flavor is rustic with a medium heat level. These peppers are a perfect complement to almost everything, including in meat rubs, sauces, and much more. These tacos are not only easy to make but are also full of flavor.
2 tablespoons chipotle sauce
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
4 small chicken breast fillets
Nonstick cooking spray
8 (6-inch) corn tortillas, warmed
1 cup Guacamole
1. In a small bowl, whisk together the chipotle sauce, cumin, salt, and pepper.
2. Add the chicken to the chipotle paste, coat, and set aside. Allow the chicken to rest for 5 minutes to develop flavors.
3. Place a cast-iron grill pan over medium heat. Once hot, coat with cooking spray and add the chicken. Cook on each side for 4 to 6 minutes, until the internal temperature reaches 165°F and the chicken has well-defined grill marks, flipping once halfway through.
4. Set the chicken aside and allow to cool for 2 minutes before cutting it into slices.
5. Stuff the tortillas with the grilled chicken, top with the guacamole, and serve.
