Mushroom and Brown Rice from the South

Prep time: 30 minutes

Serves: 4

Recipe

4 tablespoons of butter

2 medium sized yellow onions, well diced

1 cup of white long grain rice

1 can of mushrooms, drained and sliced

2 cups of beef broth

1/2 teaspoon of salt

1/2 cup of chopped parsley

Direction

First, heat up your butter in a pan. Then, add your onions and cook for about 10 minutes or until it becomes tender and golden brown.

Add your rice, and mushrooms to the pan, stir properly and cook for about 2 minutes. Add your broth, and salt and boil properly, reduce the heat, cover your pot, and cook under low heat until your liquid is absorbed and your rice is soft.

Lastly, remove from heat, set aside for about 5 minutes, and serve topped with your parsley.
