In a large saucepan, cook gnocchi according to package directions. When dumplings float to the top, they’re done. Drain water and transfer gnocchi to a bowl while you make the soup.
In the same saucepan, combine the broth, water, vegetable bouillon, chicken bullion, pesto, half-and-half, cornstarch mixture, salt, and pepper. Bring to a boil over high heat, stirring constantly, and then reduce to low. Return gnocchi back to the pan and let soup simmer for 1 to 2 minutes while dumplings reheat. Serve with a sprinkling of cheese for garnish.
