Set the broiler of your oven.

In a nonstick skillet, add the oil over medium heat and cook until heated.

Add the garlic and cook for about 2-3 minutes, mixing often.

Add the spinach and cook for about 2-3 minutes.

Stir in 1/8 tsp of each salt and pepper. and remove from the heat.

Meanwhile, in the bottom of a baking sheet, arrange the bread slices and cook under the broiler for about 2 minutes.

Remove from the oven and flip the bread slices.

Place the mustard onto all bread slices, followed by the spinach, tomato and cheese.

Cook under the broiler for about 2-3 minutes.

Enjoy hot.
