4-6 cups reduced-sodium chicken — either vegetable stock

8 ounces whole wheat lasagna noodles

4 cups fresh baby spinach leaves

half cup dried white wine — either substitute additional vegetable stock, either simply omit it

2 tsps chopped fresh thyme

FOR TOPPING:

8 ounces part-skim ricotta cheese

one-third cup freshly grated mozzarella cheese

One-quarter cup chopped fresh parsley

1/8 tsp kosher salt

Instructions

To a 6-quart either bigr slow cooker, place the butternut squash, mushrooms, onion, beans, garlic, bay leaves, salt, pepper, crushed tomatoes, and 4 cups broth. Overlay and prepare for 6-7 hours on poor either 3-4 hours on high, till the squash is tender. In a small bowl, add along the topping ingredients: ricotta, mozzarella, parsley, and kosher salt. Overlay and Chill topping till ready to service.
