15 – Dhaba Dal

If you’ve wondered why the roadside vendors’ food in ANY area is great, it’s because the vendors make good use of local techniques and spices. This is abundantly true in North India. The recipes are handed down through the generations, and that’s why the taste can’t be beat.

Makes 3 Servings

Cooking + Prep Time: 45 minutes

Ingredients: • 5 cups of water, filtered

• 1 cup of black gram (lentil), split

• 1/2 tsp. of turmeric, ground

• Salt, sea

To temper • 1 tbsp. of butter, unsalted

• 1 tsp. of cumin seeds

• 1/2 tsp. of ginger, fresh

• 1 tsp. of garlic

• 2 slit chilies, green

• 1 minced onion, small

• 1 chopped tomato, small

• 1/4 cup of pureed tomatoes

• 2 tsp. of pre-made dhabba tadka lentil spice mix

• 1 fresh lemon, juice only

Instructions:

1. Cook dal with turmeric and salt.

2. Add 1 tbsp. butter to deep pan. Fry garlic and ginger.

3. Add onions. Cook till they are transparent. 4. Pour in cooked dal. Then add chopped tomatoes, salt and green chilies.

5. Wait a minute, then add dhaba tadka mix and tomato puree.

6. Top with lime juice and serve.
