Ingredients

4 pounds beef sirloin, cut into cubes

2 onions, quartered

1 large bell pepper, cut into large cubes

4–5 small tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

3–4 tablespoons butter

Slices of thick, crusty bread (optional)

For marinade

8 cloves garlic, minced or pounded into a paste

4 bay leaves, crumbled

¾ cup Madeira or red wine of choice

3 tablespoons olive oil

Directions

Combine marinade ingredients and pour into a shallow dish or Ziploc bag.

Add the beef cubes and let marinate, refrigerated, for 4 hours to overnight.

Skewer the beef, alternating with onion, bell pepper and tomato. If using bamboo skewers, soak in water for 1 hour before using.

Brush with olive oil and season with salt and pepper.

Grill over a preheated grill (at medium heat) with an oiled grate. Cooking time depends on desired doneness (about 8 to 15 minutes).

Lay on slices of bread and brush with butter.

Serve.
