Grind the allspice and the peppercorns to a powder in a pestle and mortar, then put them into a food processor with the cinnamon, nutmeg, thyme, spring onions and chillies. Whiz them to a purée, then stir in the sugar, salt, soy sauce and lime juice.
Put the chicken into a bowl, add the marinade and massage it into the meat, making sure you get it underneath the skin (and remembering it will be hot, so wash your hands well afterwards!). Cover and leave to marinate for at least 6 hours, or overnight.
Light a barbecue and allow it to cool to a medium heat – you should be able to hold a hand over the grill for 4 seconds without tears. Put the chicken on the grill and sear well on both sides, then move it to the edges of the barbecue, put the lid on and cook for about 25 minutes, turning occasionally, until all the pieces are cooked through.
Alternatively, preheat the oven to 200°C/fan 180°C/gas 6 and bake the chicken in a roasting tray loosely covered with foil for about an hour, until cooked through. Heat a griddle pan on a high heat, then sear the legs until charred and crisp on both sides.
Serve with rice and peas, baked sweet potato or fluffy cornbread fritters.
