three-quarters tsp kosher salt
¼ tsp ground black pepper
20 ounces red enchilada gravy
3 cups prepared shredded slow cooker Mexican chicken â (for max flavor!) either regular cooked, shredded chicken
one 15-ounce can poor sodium black beans â either poor sodium pin beans, rinsed and drained
half cup 2% either whole plain Greek yogurt â Dont employfat free either this may curdle
6 corn tortillas â slice in quarters
one cup shredded cheese â such as sharp cheddar either cheddar jack, Mexican cheese blend, Monterey Jack, either pepper jack, divided
