Calf’s Liver with Persillade

Besides being very nutritious, this dish is extremely popular. There are two main keys to its success: firstly, the calf’s liver must be very fresh, indicated by a pale pink colour and a firm texture, with no stickiness or smell. Secondly, it must be sliced very thinly, otherwise the texture will be completely wrong. A short cooking time is also essential. The best accompaniment for this dish is Potato Purée. A persillade is a mixture of shallots, garlic and parsley (and sometimes tarragon), frequently used in French cooking. It is usually added to a dish towards the end.
