Ima's Potato Salad

Ingredients

2 pounds russet potatoes, peeled

3/4 cup mayonnaise

1 cup frozen peas and carrots, thawed

6 hard-cooked eggs, chopped

6 Israeli-style pickles, chopped

1/2 cup spicy mustard

salt and pepper to taste

Direction

Cover potatoes with salted water in a large pot. Boil over high heat then lower to medium-low. Cover then simmer for 20 minutes till tender. Drain and let steam dry for 1-2 minutes.

Finely chop the pickles and hard-cooked eggs.

Once the potatoes are cool enough to handle, cube and move them to a 9x13-inch dish. Add in carrots, peas, mustard, mayonnaise, pickles and chopped eggs then stir gently till combined. Add pepper and salt to taste. Store the salad in the fridge before serving or immediately serve.
