Pour oil into a skillet and heat over medium flame. When the oil is heated, add spinach and cook for a couple of minutes.

Once spinach wilts, stir in tomatoes and cook until the tomatoes are slightly soft.

Pour in the egg mixture and stir lightly. Do not stir for about a minute or until eggs are soft set. Now stir often until scrambled and the eggs are cooked to the desired doneness.

Add feta cheese and quinoa and mix well. Heat thoroughly.

Divide into bowls and serve.
