1 red pepper, remove the seeds & finely sliced
½ teaspoon ground cumin
4 ½ oz precooked roast chicken
1 lime, medium-sized, halved
½ teaspoon smoked paprika
2 wholemeal wraps
1 tablespoon fresh coriander, roughly chopped
25g soured cream, low-fat
1 teaspoon vegetable oil
Freshly ground black pepper & salt, as required, to taste
Directions:
1. Over moderate heat in a large frying pan, heat up the oil until hot & stir fry the pepper and spring onions until just softening, for a minute, stirring the ingredients every now and then.
2. Add in the smoked paprika and ground cumin then, season with pepper and salt, continue to stir fry the ingredients for a minute more. Once done, stir in the cooked chicken and continue to cook until the chicken is heated through and nicely coated, for 3 to 5 more minutes.
3. Next, heat the wraps per the instructions mentioned on the package, placing a heated wrap on every plate. Top with the stir-fried vegetables and chicken, scatter with the coriander & squeeze of lime. Drizzle a bit of soured cream, roll up. Serve immediately and enjoy
