SPINACH AND ALMOND PESTO
Pesto is a super versatile brunch staple. Throw it on top of everything from scrambled eggs to a perfectly cooked steak, or stir it into Roasted Home Fries. Instead of basil, I like to make it with spinach, because it’s easy to find year-round and makes for a beautiful, bright green pesto. If you like, try substituting roasted salted cashews for the almonds. Keep the pesto jarred in the fridge and you’ll be surprised all the things you dollop it on!
MAKES ABOUT 1 CUP
2 packed and heaping cups spinach leaves
1 garlic clove
¼ cup coarsely chopped roasted salted almonds
2 tablespoons fresh lemon juice
⅓ cup grated Parmesan cheese
⅓ cup olive oil
