4.14 Scattered Sushi Rice/Chirashi-zushi

Cooking Time: 30 minutes

Ingredients:

Japanese rice, two cups

Rice vinegar, a quarter cup

Salt, one tsp.

Sugar, two tbsp.

Shitake mushrooms, eight

Sashimi, half pound

Eggs, three

Mirin, one tsp.

Sesame seeds, as required

Tuna, half pound

Instructions:

Combine the ingredients.

​ Put rice in a large bowl and wash it with cold water. Repeat washing until the water becomes almost clear. Drain the rice in a colander and set aside for thirty minutes.
