Just before serving, reheat the demi-glace if necessary and whisk the butter into the sauce. Season to taste with salt and pepper.

Method for the pesto-crusted chicken

Preheat the oven to 375°F.

To make the pesto crust, blend the sun-dried tomatoes, garlic, and basil in a food processor. Stir in the Parmesan cheese, pepper to taste, and salt only if needed. (The Parmesan cheese will lend some saltiness.) Set aside.

Heat the oil in a large skillet over medium heat. Season the chicken with pepper only (the pesto will provide the salt). Cover the curved side of each chicken piece with pesto, pressing to make it adhere. Sear the chicken pieces pesto-side down for 1 or 2 minutes, being careful not to burn it. Using a spatula, carefully flip the chicken over and sear on the other side for 1 minute. (You will probably have to do this in batches.) Transfer the breasts to a large baking dish or roasting pan and roast until fork-tender, 15 to 20 minutes.
