Baked Clams

Serves 4

Ingredients

2 dozen littleneck clams

1 lemon

1 cup Italian breadcrumbs (or you can use the Homemade Breadcrumbs recipe on this page and add Italian seasoning)

2 tablespoons grated Parmesan or Romano cheese

1 teaspoon garlic powder

¼ cup light or whipped butter, melted

6 slices bacon (you can use low-sodium or turkey bacon if preferred)

1 tablespoon olive oil

Directions

Open clams and loosen from their shells. You can also put the clams on a cookie sheet, bake at 375°F until they open, let cool, and then loosen the clam meat from the shell. Squeeze the lemon over the clams. Melt the butter and olive oil together and squeeze any remaining lemon juice into the mixture. Mix the breadcrumbs with the cheese and garlic powder. Fill each clam with the breadcrumb mixture; drizzle the butter over the clams. Top with bacon and broil with an open oven door until the bacon is cooked (7 to 10 minutes). Watch carefully so they do not burn.
