When the base is ready and at a steady simmer, crack in the eggs, cover the pan with a lid and cook for 2½–3 minutes.*

STEP 5 — CHECK IF THE WHITES ARE SET

If the whites are opaque and firm, remove the pan from the heat and do not put the lid back on top. If they are slightly translucent, remove from the heat but return the lid for 30–60 seconds more – the eggs will continue to cook in the residual heat.

STEP 5 — GARNISH

With yoghurt, labneh, sour cream, tahini, harissa, spiced butter, olive oil, seeds and sprinkles.
