Mango & Passion Fruit Fool

Try to find Pakistani honey mangoes for this recipe. They are small and yellow and as sweet as sherbet. If you do find them, you won’t need to add extra honey to taste. If you can’t get hold of any passion fruit, raspberries are a great alternative.

2 mangoes, such as honey

4 passion fruit or

500g/1lb 2oz/2 cups thick

mangoes, peeled, stoned

150g/5½0z/1¼ cups

natural yogurt

and finely chopped

raspberries

clear honey, to taste

1 Put the mango in a large bowl. Cut each passion fruit in half and scoop out y theb

the flesh and seeds into the bowl with the mango.

2 Divide the yogurt into bowls and top with the mango and passion fruit mixture. Taste and add a little honey, if you like, and serve.

4 ready-made meringues or

250g/9oz/2 cups

250ml/9fl oz/1 cup crème

meringue nests

chopped fruit, such as

fraîche or thick cream

1 Break the meringues into a large bowl and gently stir in the fruit and crème the

fraîche. Serve immediately.

8 marshmallows

100g/3½oz chocolate,

16 biscuits, such as

any variety, broken into

digestives

1 If using wooden skewers, soak them in cold water for at least 30 minutes before grilling. Thread 2 marshmallows onto the end of each skewer and toast them over a barbecue, open fire or a gas flame for about 3 minutes until golden on the outside. Don’t toast them too close to the flame or they will burn.

2 To make a s’more, sandwich 1 hot toasted marshmallow and 1 square of chocolate between 2 biscuits. Repeat with the remaining ingredients and serve while the marshmallows and chocolate are gooey.

Sticky Toffee Bananas

This is a really quick dessert to prepare and is enormously satisfying and warming – particularly if you add the rum!

60g/2¼oz butter

2 tbsp clear honey, golden

1 tbsp rum (optional)

4 bananas, peeled and cut

syrup or sugar, any

crème fraîche or custard,

into diagonal slices

1 Heat the butter in a frying pan over a medium heat until melted. Add the bananas and cook for about 3–4 minutes, turning occasionally, until they start to brown.

2 Add the honey, orange juice and rum, if using, and cook for another 1 minute until the liquid starts to simmer. Serve hot with crème fraîche.
