I have always loved three-bean salad. During my vegetarian years, it was often the only thing I could eat at potlucks and barbecues. But the traditional recipes call for up to â cup of sugar, which really doesnât seem necessary for a salad. I still like a little bit of sweetness from the honey.
â cup apple cider vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon honey
½ teaspoon salt
¼ teaspoon black pepper
¼ cup red onion, finely chopped
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can cannellini beans, drained and rinsed
1 (15-ounce) can garbanzo beans, drained and rinsed
1 cup celery, chopped (about 3 to 4 stalks)
¼ cup chopped flat-leaf parsley
