Ingredients
1 pint cherry tomatoes, halved lengthwise
1 English cucumber (or any large cucumber)
1 small red onion
1 small green bell pepper
1 small jar of Kalamata olives
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon oregano
6 ounces crumbled feta cheese
Directions
Wash all the vegetables, chop them into bite-sized pieces, and then add them to a salad bowl.
Mix in the Kalamata olives (8â10 olives should do the trick).
Mix the olive oil, red wine vinegar and oregano in a small dish, then add to the salad bowl and mix well to ensure that the vegetables are well coated.
Mix in the feta cheese.
You can sprinkle some additional oregano on top if youâd like. Serve immediately.
