1/4 cup of Parmesan cheese, shredded

1/4 tsp. of pepper, ground

2 oz. of thin-sliced prosciutto

Instructions:

1. Cook the pasta using instructions on package, but omit the fat and salt. Drain well. Transfer to large-sized bowl.

2. Heat a non-stick, large skillet on med. heat. Add pine nuts. Cook while occasionally stirring for 1 & 1/2 minutes, till toasted. Add nuts to pasta bowl.

3. Heat the oil in large pan on med. heat. Add the garlic and stir occasionally while cooking for two minutes. Add the spinach. Stir constantly while cooking for two minutes, till spinach has wilted.

4. Add the cheese, spinach mixture and remainder of ingredients to pasta bowl and toss well, then serve.
