1/4 cup packed fresh flat-leaf parsley
2 cloves garlic
1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
1/2 cup tahini (sesame seed paste; see page 15)
3/4 teaspoon kosher salt
1/2 cup fresh lemon juice
Dippables: Crudités; Pita Chips; Bagel Chips; Garlic Bagel Chips
In the workbowl of a food processor fitted with the metal blade, process the parsley and garlic until finely minced. Add the chickpeas, tahini, salt, and lemon juice. Process the mixture until smooth and puréed. Transfer to a serving bowl. Cover and refrigerate for 2 hours before serving to meld the flavors. Remove from the refrigerator 20 minutes before serving.
