Take a large pot, place it over medium-high heat, add oil and when it melts, add onion and garlic and then cook for 5 minutes until light brown.
Add chopped cauliflower florets along with bay leaves, cook for 5 minutes, then add watercress and spinach and continue cooking for 3 minutes or more until leaves have wilted.
Then pour in the vegetable stock, bring the mixture to a boil, switch heat to medium level, and cook for 7 to 10 minutes until florets have turned tender-crisp.
Pour in the milk, season soup with salt and black pepper, then remove the pot from heat and puree the soup by using an immersion blender until smooth.
Serve straight away.
