Preparation Guidelines:

1. First, clean the squid and prepare it in batches. Coarsely chop it using a food processor and chill it in the refrigerator.

2. Dice and sauté the onions in oil until ‘just’ wilted. Mince/dice the garlic, celery, and carrots. Add them to the mixture with the saffron to sauté about one to two minutes. Add the squid, cooking fast to evaporate the liquids.

3. Pour in the vermouth and simmer/reduce until almost dry. Stir in the seasonings and tomato sauce.

4. If you want to break it into individual servings, warm two cups of sauce with eight ounces of pasta. Toss and garnish with the fried tentacles.

5. It’s even tastier if stored in the fridge overnight.

6. When serving or reheating, mix the salad - placing the pepper on top with a portion of the cheese.
