BARBECUE SAUCE
Use this sauce on chicken or spareribs.
1 cup tomato sauce
⅓ cup catsup
¼ cup honey
1 teaspoon soy sauce
2 teaspoons prepared mustard
1 teaspoon molasses
2 tablespoons minced onion (optional)
Combine all of the ingredients together in a jar and blend. Keep refrigerated. Makes about 1¾ cups.
For a sweeter sparerib, brush the ribs with warmed honey first, and then baste with the barbecue sauce during the last 30 minutes.
PLUM SAUCE FOR CHINESE DISHES
Try this sauce with homemade egg rolls.
2½ cups fresh fruit (plums, apricots, peaches, or apples)
½ cup water
2 tablespoons cider vinegar
2 tablespoons honey
⅛ tablespoon salt
1 tablespoon soy sauce
1 small clove garlic, minced
Pinch ginger (optional)
Dash Tabasco sauce (optional)
Skin and chop the fruit. Combine all of the ingredients in a saucepan and slowly bring to a boil. Simmer uncovered until all the fruit is tender but not too soft. Cool before serving.
MAKES 4 SERVINGS.
