2 tbsp soy sauce

½ cup sherry or dry white wine

¼ cup water plus cooking water

1 tsp cornstarch

1 lb. jumbo shrimp, peeled and deveined (shells reserved)

1 tbsp peanut (or other preferred) oil

2 cups broccoli florets

1 medium carrot, sliced diagonally

1 celery stalk, sliced diagonally

1 cup green beans, washed and trimmed

1 cup snow peas, washed and trimmed

4 cloves garlic, crushed and minced

1 1-inch piece ginger, peeled and grated

1 bunch green onions, greens reserved for garnish

¼ cup fish stock

Rice for serving
