The okra in this recipe is served on rice as a simple entree or as a side dish. Use frozen okra will save your time and money.
Makes 4 Servings
Cooking + Prep Time: 35 minutes
Ingredients:
3 slices of bacon
1 x 16-oz. pkg. of sliced okra, frozen
1 x 14 1/2-oz. can of tomatoes, chopped
1 cup of seasoning blend, onion, frozen
1 cup of corn kernels, frozen
1/2 cup of water, filtered
1 tsp. of seasoning, Creole
1/4 tsp. of pepper, ground
Optional: cooked rice, hot
Instructions:
1. Cook the bacon in large pot till crisp. Remove it and drain it on layered paper towels. Reserve the drippings. Crumble the bacon and set it aside.
2. Cook the okra and the next six ingredients in the drippings in pot on med. high and stir the mixture occasionally for about five minutes. Reduce the heat level to low. Cover pot. Simmer for 15 minutes, till vegetables become tender. Top them with bacon crumbles. Serve with rice, as desired.
