SERVES 4

2 tbsp olive oil

500 g/1 lb 2 oz diced belly pork

1 onion, chopped

1 red (bell) pepper, deseeded and cut into strips

400 g/14 oz pumpkin or butternut squash, peeled, deseeded and cut into large chunks

8 new potatoes, halved

12 baby carrots (e.g. Chantenay), scraped and trimmed

900 ml/1½ pints ham hock broth

2 fresh corn cobs, shucked and cut into 2–3 pieces

125 g/4 oz thin green beans, trimmed

dash of chilli or hot pepper sauce (or serve separately)

1 small bunch coriander (cilantro), chopped

salt and freshly ground black pepper

cooked quinoa, to serve
