Ingredients:
1 lb halibut, skinless, boneless, and chopped
1 1/2 tbsp ginger, minced
2 celery stalks, chopped
1 carrot, sliced
1 onion, chopped
1 cup of water
2 cups beef stock
1 tbsp olive oil
2 tbsp fresh parsley, chopped
Pepper
Salt
Directions:
Add oil into the instant pot and set the pot on sauté mode.
Add onion to the pot and sauté for 3-4 minutes.
Add water, celery, carrot, ginger, and stock and stir well.
Seal pot with lid and cook on high for 5 minutes.
Release pressure using the quick release method than open the lid.
Add fish pieces to the pot and cook on manual low pressure for 4 minutes.
Release pressure using the quick release method than open the lid carefully.
Garnish soup with parsley and serve.
