Prepare the cookies as shown on p14–17.
For the number one Roll out sugarpaste to a thickness of 3mm (¹⁄8in) and cut out ones, using the cookie cutter used to create the cookie. Place the sugarpaste on top of the cookies and attach sweets using piping gel to ensure they stick.
For the cupcake Paint piping gel over the lower half of the cookie. Roll out the red sugarpaste and cut out a cupcake using the cupcake cutter. Cut away the top of the sugarpaste to leave just the cupcake case shape and carefully place on the cookie. Use a palette knife to emboss vertical lines on to the cupcake case to represent the folds. Place a star tube on to a piping bag, fill with soft buttercream and pipe swirls over the top of the cookie. To decorate, push sweets into the swirls as desired.
