For the Braised Greens
1 pound mizuna or other hearty green
2 cups vegetable stock
2 cups red wine vinegar
1 tablespoon cloves, whole
2 tablespoons fennel seeds
Bring vinegar, cloves, fennel seeds, and stock to a boil. Add the mizuna, reduce heat to medium-low, and simmer 20 minutes.
For the Cider-Sautéed Mushrooms
1 pound shiitake mushrooms
1 cup hard apple cider (I suggest Foggy Ridge Pippin Black)
Salt and pepper to taste
Slice the mushrooms. Place them in a hot, unoiled pan. Season with salt and pepper. Cook mushrooms 5 minutes. Deglaze with the hard apple cider and reduce until all liquid evaporates.
